Homemade Nutrient Powerhouse Chicken Noodle Soup Recipe

Last week we covered the importance of being wary of the ingredients found in the seasonal drinks that are now most likely showing up at your favorite coffee shop, including pumpkin spice lattes or cappuccinos. While they might be bursting with flavor, they can come along with high fructose corn syrup, artificial flavorings, refined sugar, and much more junk. It might sound nice and cozy to drink a hot latte as the weather gets chilly, another great way to stay warm is with a bowl of soup.
You might look at a bowl of broth and see nothing more than grease looking back at you. However, it’s essential to mention that broth is an incredible natural detox! Earlier this year while speaking at a retreat in Dallas, one talking point I had was regarding tips for detoxing. It heals your gut, reduces inflammation, boosts your immunity, and I can go on. You can find a ton of health benefits it contains in my book, Sunnah Superfoods. Bone broth is what I consider a superfood, yet one that many overlook. I understand throwing in Maggi cubes or ready carton vegetable stock into your meals gives it the flavor you are looking for, within the limited time you have to cook.
Nonetheless, I assure you, the benefits outweigh the few extra minutes you might have to spend making it. I’ve had clients complain about digestion issues, joint pain, or excessive allergies; bone broth was almost always a recommendation on their session notes. There is nothing like the feedback I receive from them after implementing this daily habit. The great thing is the broth tastes amazing on its own! If you are not in the mood for the soup itself, consuming the strained broth could bring a myriad of health benefits your way.
This soup will taste better than any restaurant or store-bought chicken noodle soup. More importantly, it’ll contain a powerhouse of nutrients and vitamins since the chicken broth is fresh, and not pasteurized. Additionally, you will save yourself from putting soybean, corn, or canola oil into your body, as it is very unlikely restaurants use cold-pressed avocado oil. Make this soup to stay warm and healthy this winter.
Ingredients:
Noor’s Powerhouse Bone Broth
- 10 cups boiling water
- 2 pounds organic pasture-raised chicken (with bones)
- 1 tablespoon organic apple cider vinegar
- 1 tablespoon turmeric, ground
- 2 tablespoons Himalayan pink salt
- 1 raw onion, sliced into quarters
- ½ bunch fresh parsley
- 2 slices fresh ginger
- ½ tablespoon ground ginger
- 1 dried lemon
- 2 cinnamon sticks
- 5 green cardamom pods
- 4 cloves, whole
- 6 whole black peppers
- 2 whole all spice
- 3 bay leaves
Soup:
- 1 cup sliced carrots
- 1 cup chopped celery
- 1 medium red onion, chopped
- 1 cup broccoli, chopped
- 2 cups boiling water
- 1/8 cup cold-pressed avocado oil
- 2 cups gluten-free organic noodles
Directions:
- Place all ingredients except for the water in a pressure cooker. Pour water over the chicken (this starts the cooking process).
- Cover; Cook on high heat for 35-40 minutes.
- Allow all of the pressure to release before opening. Strain. Set aside.
- In a medium cooking pot, sauté the red onion and avocado oil until browned. Add the carrots, celery, and broccoli. Stir occasionally and allow to cook for about 3-5 minutes.
- Meanwhile shred the chicken off of the bones and set aside.
- Add 2 cups of boiling water, noodles, chicken, and the chicken broth. Allow the soup to simmer until noodles are tender; enjoy.
